I’ll be the first to admit when I’m cooking for a potluck, I’m usually looking for an easy recipe with as many shortcuts as possible. Hey, just because it’s only a few ingredients and takes 20 minutes doesn’t mean it won’t taste good and wasn’t made with love.

Maybe I learned it from my mom, whose get-together contributions are usually her pierogi lasagna or Mississippi pot roast. TikTok creator Jen Curley has been posting about her four-ingredient dip for years. Sometimes, she makes it in the summer, sometimes during football season, and sometimes even just for fun during the winter—but, to me, nothing screams warm weather days quite like a creamy potato chip dip

Unlike our Baked Potato Dip—which is a five-star recipe in itself—Curley’s only requires sour cream, green onion, cheese, and bacon, which makes it super appealing. While she’s added ranch seasoning in some videos, normally, the dip speaks for itself with just four ingredients.

The dip is served cold with classic potato chips—making each bite a tiny, perfectly loaded "baked potato."

The dip comes together in minutes after you cook the bacon to your liking, but it would be even faster if you used bacon bits instead of fresh bacon. Either way, it’s easy to toss together in a pinch—and because dip doesn’t have to be pretty, it transports wonderfully.

I brought the four-ingredient baked potato dip to a picnic with my friends, and everyone raved about it. Will the cold dip replace my love for Buffalo chicken dip? No, but making baked potato dip for spring and summer and Buffalo chicken dip for fall and winter sounds like a pretty good plan.

How to Make 4-Ingredient Baked Potato Dip

Ingredients

  • 1 pound bacon, chopped
  • 1 (16-ounce container) sour cream
  • 1 cup Cheddar cheese, shredded
  • 1/2 bunch green onions, chopped

Directions

  1. Cook chopped bacon according to package instructions. Drain and let cool.
  2. Stir sour cream, Cheddar, green onions, and bacon together until combined. Transfer to a bowl, garnish with cheese and green onions, and serve.
