History
During his travels in Germany, Thomas Jefferson (April 13 [O.S. April 2]1743– July 4, 1826) documented the production of Westphalian ham and aspects the hogs used to produce it.
In the early 1900s, there were three varieties of Westphalia ham: kugel cut, boneless and rolled, and regulation ham.
In the early 1900s, significant quantities of Westphalian ham was being exported from Germany into the United States.
Westphalian ham (Westfälischer Schinken) produced from acorn-fed pigs raised in Westphalia. The resulting meat is dry cured and then smoked over a mixture of beechwood and juniper branches.

Warendorf
The history of the Westphalian horse is linked with the State Stud of Warendorf, which was founded in 1826 to serve both the Prussian provinces of Westphalia and Rheinland. The stud was built under the Prussian Stud Administration, which was put together by King Frederick William I in 1713 to improve horse breeding efforts in the German-speaking region. Government-owned studs, identified as "State" or "Principal" studs depending on whether the facility keeps its own herd of mares, purchase stallions that fit the needs of the surrounding region. The stud fees of state-owned stallions are low, enabling local breeders to produce high-quality horses from heavy drafts to riding horses to ponies.
The Westphalian age is preceded by the Namurian stage/age (which corresponds to the Millstone Grit Series of Great Britain) and succeeded by the Stephanian stage/age (which corresponds to the uppermost part of the Coal Measures of Great Britain). In the official geologic timescale of the ICS, the Westphalian is placed within the Pennsylvanian epoch (318-299 Ma).
The (regionally defined) Westphalian stage corresponds to the upper part of the (internationally used) Bashkirian stage together with the whole of the Moscovian and Kasimovian stages. Frequent references appear in scientific literature to a Westphalian epoch or Westphalian series reflecting the stage's earlier status.
Ham is pork that has been preserved through salting, smoking, or wet curing. It was traditionally made only from the hind leg of swine, and referred to that specific cut of pork. Ham is made around the world, including a number of highly coveted regional specialties, such as Westphalian ham and Jamón serrano. Technically a processed meat, "ham" may refer to a product which has been through mechanical re-forming.
The precise nature of meat termed "ham" is controlled in a number of areas, often by statute, including the United States and European Union. In addition, numerous ham products have specific geographical naming protection, such as Prosciutto di Parma and Prosciutto Toscano PDO in Europe, and Smithfield ham in the US.
Definition
The preserving of pork leg as ham has a long history, with Cato the Elder writing about the "salting of hams" in his De Agri Cultura tome around 160 BC.
There are claims that the Chinese were the first people to mention the production of cured ham, whilst Larousse Gastronomique claims an origin from Gaul, but it was certainly well established by the Roman period, including an import trade from Gaul mentioned by Marcus Terentius Varro in his writings.
HAM is an Icelandic rock band which was active in the years 1988 to 1994. They are often listed as a heavy metal band but have never categorized themselves as such. They did not attain significant popularity while active, but have gradually come to be acknowledged as an important part of Icelandic rock history. Today they command a cult following among many Icelandic rock enthusiasts.
History
HAM's first album was Hold, a controversial record which received no radio airtime. The band's attempt to get into the big league began when they warmed up for The Sugarcubes in five concerts in 1988. The following year they released the album Buffalo Virgin with One Little Indian records and held several concerts in New York. The album Pleasing the Pirahna was recorded in 1990 but was never released—supposedly another album by the name Pimpmobile was also recorded but remains unreleased.
In 1991-1992, the band participated in the making of the film Sódóma Reykjavík, with singer and guitarist Sigurjón Kjartansson writing most of the soundtrack. HAM's participation in the making of this cult Icelandic classic played a significant part in the band's later notoriety.
According to the Hebrew Bible, Ham was one of the sons of Noah and the father of Cush, Mizraim, Phut and Canaan, who are interpreted as having populated Africa and adjoining parts of Asia. The Bible refers to Egypt as "the land of Ham" in Psalms 78:51; 105:23,27; 106:22; 1Ch 4:40. Since the 17th century a number of suggestions have been made that relate the name Ham to a Hebrew word for burnt, black or hot, to an Egyptian word for servant or the Egyptian word Kmt for Egypt. A review of David Goldenberg's The Curse of Ham: Race and Slavery in Early Judaism, Christianity and Islam states that Goldenberg "argues persuasively that the biblical name Ham bears no relationship at all to the notion of blackness and as of now is of unknown etymology."

The first studbook for horses in Westphalia was founded in 1888, and the following year the first evaluations of stallions and mares were carried out.[3] These inspections became the defining characteristic of the Westphalian, as they had for other warmbloods. The breeders of the best fillies were awarded a prize or premium as an incentive to keep high-quality breeding stock in the region. Only the very best colts, the young male horses that most closely fit what the local breeders wanted in a horse, were allowed to become breeding stallions. The first performance tests were held in 1905. These performance tests meant that stallions had now to not only fit a conformational model to be used for breeding, but also had to prove their worth under saddle and in front of the plow.
World War II destroyed all the old pedigree records that had been kept so carefully. The next mare evaluation wasn't held until 1946, when a new breeding aim was implemented - a riding horse. Within 30 years, this new aim was coming to fruition: the 100-day test was implemented in 1982, and a Westphalian, Ahlerich, took gold in dressage at the Los Angeles Olympics of 1984.

The standard for all German riding horses calls for an appealing, long-lined, correct riding horse with bold, expansive, elastic gaits, suitable for all types of riding due to its temperament, character, and rideability. The Westphalian's type is less refined than that of a Thoroughbred, but less coarse than that of a "cold blood". Westphalians usually stand between 15.2 and 17.2 hands.
Westphalians are bred to be suitable for pleasure riding and competitive in dressage and show jumping. As of September 2010, the studbook was ranked #6 worldwide in show jumping, #5 in dressage and #12 in eventing by the World Breeding Federation for Sport Horses.
Olympians bearing the Westphalian brand appeared during the 1980s. The first was Ahlerich (by Angelo xx) who took individual gold in dressage at the 1984 Los Angeles Olympics. At the 1988 Seoul Olympics, individual dressage gold was won by Rembrandt (by Romadour II), who with Ahlerich was on the gold-medal German dressage team, while Pikeur Pedro (by Pilot) was part of the gold-medal German jumping team that year. In 1992 Rembrandt took individual dressage gold again, while teammate Goldstern (by Weinberg) took bronze. The two horses were part of the gold-medal German dressage team in Barcelona. At the Atlanta Olympics in 1996, Goldstern and Durgo (by Degen) were both part of the gold-medal German dressage team. Most recently, Farbenfroh (by Freudentaenzer) was a member of the gold-medal German dressage team at the 2000 Sydney Olympics.
Westphalian breeding has produced a number of sires very influential to sport horse breeding, including Polydor and his half brother Pilot, and Rubinstein. These families are significant for jumping and dressage respectively.

The Westphalian or Westfalen is a warmblood horse bred in the Westphalia region of western Germany. The Westphalian is closely affiliated with the state-owned stud farm of Warendorf, which it shares with the Rhinelander. Since World War II, the Westphalian horse has been bred to the same standard as the other German warmbloods, and they are particularly famous as Olympic-level show jumpers and dressage horses. Next to the Hanoverian, the Westphalian studbook has the largest breeding population of any warmblood in Germany.
The first studbook for horses in Westphalia was founded in 1888, and the following year the first evaluations of stallions and mares were carried out.[3] These inspections became the defining characteristic of the Westphalian, as they had for other warmbloods. The breeders of the best fillies were awarded a prize or premium as an incentive to keep high-quality breeding stock in the region. Only the very best colts, the young male horses that most closely fit what the local breeders wanted in a horse, were allowed to become breeding stallions. The first performance tests were held in 1905. These performance tests meant that stallions had now to not only fit a conformational model to be used for breeding, but also had to prove their worth under saddle and in front of the plow.
World War II destroyed all the old pedigree records that had been kept so carefully. The next mare evaluation wasn't held until 1946, when a new breeding aim was implemented - a riding horse. Within 30 years, this new aim was coming to fruition: the 100-day test was implemented in 1982, and a Westphalian, Ahlerich, took gold in dressage at the Los Angeles Olympics of 1984.
The Westphalian excels in dressage.
Westphalians are bred to the same standard as the other German warmbloods and in particular exchange a great deal of genetic material with the nearby Rhinelander and Hanoverian. The standard for all German riding horses calls for an appealing, long-lined, correct riding horse with bold, expansive, elastic gaits, suitable for all types of riding due to its temperament, character, and rideability. The Westphalian's type is less refined than that of a Thoroughbred, but less coarse than that of a "cold blood". Westphalians usually stand between 15.2 and 17.2 hands.
Westphalians are bred to be suitable for pleasure riding and competitive in dressage and show jumping. As of September 2010, the studbook was ranked #6 worldwide in show jumping, #5 in dressage and #12 in eventing by the World Breeding Federation for Sport Horses.
Olympians bearing the Westphalian brand appeared during the 1980s. The first was Ahlerich (by Angelo xx) who took individual gold in dressage at the 1984 Los Angeles Olympics. At the 1988 Seoul Olympics, individual dressage gold was won by Rembrandt (by Romadour II), who with Ahlerich was on the gold-medal German dressage team, while Pikeur Pedro (by Pilot) was part of the gold-medal German jumping team that year. In 1992 Rembrandt took individual dressage gold again, while teammate Goldstern (by Weinberg) took bronze. The two horses were part of the gold-medal German dressage team in Barcelona. At the Atlanta Olympics in 1996, Goldstern and Durgo (by Degen) were both part of the gold-medal German dressage team. Most recently, Farbenfroh (by Freudentaenzer) was a member of the gold-medal German dressage team at the 2000 Sydney Olympics.
Westphalian breeding has produced a number of sires very influential to sport horse breeding, including Polydor and his half brother Pilot, and Rubinstein. These families are significant for jumping and dressage respectively.
Westphalians are also popular in North America in show hunter competition.
