Tongue is the main village in a series of croftingtownships that runs through Coldbackie, Dalharn, Blandy, and the harbour of Scullomie to the deserted township of Slettel. The village includes a youth hostel, a craft shop, a general store and garage, a bank, a post office and two hotels, the Tongue Hotel and The Ben Loyal Hotel. It is connected to the west side of the Kyle by the Kyle of Tongue Bridge and Causeway, built in 1971.
Toponymy
Contrary to popular belief, the name Tongue does not refer to the shape of the Kyle of Tongue (though the kylecan be described as "tongue-shaped"). Rather it is a geographical term in Old Norse which refers to a piece of land shaped like a spit or tongue. That tongue of land projecting into the Kyle is the terminal moraine of the Kyle of Tongue glacier, and forms the eastern part of the Kyle of Tongue causeway.
Beef tongue or neat's tongue is the tongue of a cow. Beef tongue is very high in fat, at almost 75% of its calories derived. Some countries, including Canada and specifically the province of Alberta, export large quantities of beef tongue.
The tongues of other animals, notably pigs and lambs, are also eaten, and are very similar to beef tongue.
In some animals, the tongue is reputed to be the tastiest part. For example, Adolf Erik Nordenskiöld found most of the
walrus not particularly tasty, but walrus tongue, a delicacy. The whale tongue, too, was viewed as a Lenten delicacy by Roman Catholics in the Middle Ages.
Preparation
Tongue is often seasoned with onion and other spices, and then placed in a pot to boil. After it has cooked the skin is removed. Pickled tongue is often used by the preparer because it is already spiced. If cooked in a sauce, it can then later be reused as a sauce for meatballs or any other food item.
Another way of preparing tongue is to scald it in hot water and remove the skin, then roast the tongue in an oven, using the pan drippings to prepare a gravy.
Squeeze is the fifth and final studio album released by the Velvet Underground. While labeled as a Velvet Underground record, it actually features no members of the group other than multi-instrumentalist Doug Yule, who wrote and recorded the album almost entirely by himself. Yule had joined the Velvet Underground prior to recording their self-titled third album, replacing founding member John Cale, and had contributed significantly to the fourth album, Loaded. Following the departures of the remaining founding members, Lou Reed and Sterling Morrison, Yule took control of the band. Longtime drummer Maureen Tucker was slated to appear on Squeeze by Yule, but she was dismissed by the band's manager, Steve Sesnick.
Following a promotional tour for the album by Yule and a backing band, Yule called it quits, bringing the Velvet Underground to an end until the group reformed for a tour in 1993. Squeeze failed to chart and quickly fell into obscurity after its release. Critics generally dismiss the record as "a Velvet Underground album in name only".
A squeeze play (or squeeze) is a tactic, often occurring late in the hand, used in contract bridge and other trick-taking games in which the play of a card (the squeeze card) forces an opponent to discard a winner or the guard of a potential winner. Although numerous types of squeezes have been analyzed and catalogued in contract bridge, they were first discovered and described in whist.
Most squeezes operate on the principle that declarer's and dummy's hands can, between them, hold more cards with the potential to take extra tricks than a single defender's hand can protect or guard. Infrequently, due to of the difficulty of coordinating their holdings, two defenders can cooperate to squeeze declarer or dummy on the same principle.

Squeeze plays are considered by many "to be the domain of the experts but many of the positions are straightforward once the basic principles are understood." And according to Terence Reese, the squeeze play "in its practical aspects is not particularly difficult. It takes time, admittedly...and has...to be learned - it cannot be 'picked up'".

Knife-like tools were used at least two-and-a-half million years ago, as evidenced by the Oldowan tools. Originally made of rock, bone, flint, and obsidian, knives have evolved in construction as technology has, with blades being made from bronze, copper, iron, steel, ceramics, and titanium. Many cultures have their unique version of the knife. Due to its role as humankind's first tool, certain cultures have attached spiritual and religious significance to the knife.

Beef Tongue Tacos
This beef tongue speaks for itself (sorry I had to).
Something I find interesting about food is that our experiences with it change as we grow. When I was younger my dad often came home with beef tongue. I always thought the texture was weird and even though I ate it, I never truly appreciated it.
It wasn’t until my twenties that I accepted the fact that it was really just another cut of beef, and I’ve since grown to love it. It’s a good reminder to me to stay curious and open minded when it comes to food and cooking.
Like any tough cut, tongue needs to be tenderized (though sliced thin and grilled is great too). It’s often traditional to boil it for this step, but I decided to combine boiling with smoking to achieve the texture I was looking for. Let me know if you’ve tried tongue!

• 1 veal tongue (Couldn't find veal, so I chose an elder)
• 2 Tbsp / 28 ml olive oil
• 1 small onion , thinly sliced
• 1 leek, white part only, thinly sliced
• 1 small carrot , thinly sliced
• 1 Tbsp / 14 g flour (Wondra flour works nicely)
• 1 cup / 225 ml + 1 Tbsp separated Madeira
• 1 Tbsp / 28 ml +1 Tbsp separated sherry vinegar
• 1 cup / 225 ml strong dark chicken or veal stock
• 1 bouquet garni (parsley, thyme, bay leaves, leek leaves bundled)
• 2 sprigs flat parsley, leaves only, chopped
• 1 - 2 Tbsp unsalted butter, softened

This beef tongue speaks for itself (sorry I had to).
Something I find interesting about food is that our experiences with it change as we grow. When I was younger my dad often came home with beef tongue. I always thought the texture was weird and even though I ate it, I never truly appreciated it.
It wasn’t until my twenties that I accepted the fact that it was really just another cut of beef, and I’ve since grown to love it. It’s a good reminder to me to stay curious and open minded when it comes to food and cooking.
Like any tough cut, tongue needs to be tenderized (though sliced thin and grilled is great too). It’s often traditional to boil it for this step, but I decided to combine boiling with smoking to achieve the texture I was looking for. Let me know if you’ve tried tongue!
