SAKE - A Quick Guide
Sake is widely known as Japan’s national drink. It is believed that Japan has been making sake in one form or another for over two thousand years.
Technically, sake just means “alcohol,” so any kind of beer, wine or liquor would be considered sake. What most people mean as, “Japanese Rice Wine” is actually called Nihonshu.
And although it’s referred to as “rice wine,” it’d probably be more accurate to say, “rice beer” because wine is made from fermenting fruit, while beer is made from fermenting grains.
When you warm sake, you need to warm in indirectly, through a separate container, like when melting chocolate. Different temperatures bring out different characteristics, so you can warm it to different degrees for a slightly different taste. Just make sure that you don’t warm it too qu...

- 400g (~14oz) Steamed Rice
- 1.5g Koji-Kin
Keep Moist and Warm 86ºF (30ºC) for 30 Hours Total
Stir Every 10 Hours
For Rice Wine:
- 1 Gal (3.78L) Filtered Water
- 400g (~14oz) Kome Koji (Malted Rice)
- 1500g (~53oz) Steamed Rice
- 4g Neutral Hop (Magnum) [or 5g Citric Acid]

Sake has been brewed in Japan for thousands of years. The most expensive kind, made with polished grains of rice, is called junmai daiginjo. One bottle can easily cost over $100. And the more the rice is polished, the more expensive the sake. Niizawa Brewery, in Japan's Miyagi Prefecture, brews sake with rice polished to less than 1% of its original size. The most expensive bottles of this sake cost almost $10,000. We followed a master sake brewer to find out how sake is made and why some bottles can be so expensive.

For Kome Koji (Malted Rice):
- 400g (~14oz) Steamed Rice
- 1.5g Koji-Kin
Keep Moist and Warm 86ºF (30ºC) for 30 Hours Total
Stir Every 10 Hours
For Rice Wine:
- 1 Gal (3.78L) Filtered Water
- 400g (~14oz) Kome Koji (Malted Rice)
- 1500g (~53oz) Steamed Rice
- 4g Neutral Hop (Magnum) [or 5g Citric Acid]

Japanese Sake Brewery Hakutsuru. This is how handcrafted sake is made in a Japanese sake factory. If you are interested in how to make sake, especially handcrafted sake, this video details the full sake production in Japan. Today, there are 1550 sake breweries in Nadagogo Kobe Japan accounting for more than one quarter of Japan’s total sake production. And the Hakutsuru brewery, founded in 1743, is the top sake producer in the area with 100 hard working brewers crafting sake loved not only in Japan but all throughout the world. The Japanese sake brewery is probably most known for Maru, the everyday Japanese man’s daily sake marked with it’s signature white crane and red label produced throughout the year, but today I’m taking you on a different path, produced only in the winter, You and I are going on a journey to see firsthand how these expert brewers use a traditional method of handcrafting it’s limited production highest grade sake, daiginjo truly earning the title Made in Japan

And the more the rice is polished, the more expensive the sake. Niizawa Brewery, in Japan's Miyagi Prefecture, brews sake with rice polished to less than 1% of its original size. The most expensive bottles of this sake cost almost $10,000. We followed a master sake brewer to find out how sake is made and why some bottles can be so expensive.
