The natural occurrence of fermentation means it was probably first observed long ago by humans. The earliest uses of the word "fermentation" in relation to winemaking was in reference to the apparent "boiling" within the must that came from the anaerobic reaction of the yeast to the sugars in the grape juice and the release of carbon dioxide. The Latinfervere means, literally, to boil. In the mid-19th century, Louis Pasteur noted the connection between yeast and the process of the fermentation in which the yeast act as catalyst and mediator through a series of a reaction that convert sugar into alcohol. The discovery of the Embden–Meyerhof–Parnas pathway by Gustav Embden, Otto Fritz Meyerhof and Jakub Karol Parnas in the early 20th century contributed more to the understanding of the complex chemical processes involved in the conversion of sugar to alcohol.

When Is Primary Fermentation Complete?
Another batch of Vintner's Best Strawberry wine looked to be done with the vigorous fermenting that happens during the first week or so. While you can tell by gauging the airlock, a hydrometer is a sure-fire way to know when you can transfer into your secondary fermentation container without overwhelming the airlock and making a mess.

A short video on how to start a wine fermentation. For this video I am using Crushed and Destemmed Grapes and Fermenting on the skins. The video covers steps before fermentation, Starting the wine yeast with some time lapse action, Active Fermentation, and Punching Down. The basic steps are to Sulfite and Add Pectic Enzyme, Balance the acid, Check the sugar, hydrate your yeast, pitch your yeast, punch down once the cap forms and continue to do so two to three times a day. during the fermentation, place a lid or cover loosely on the fermenter to keep fruit flies out. When Fermentation is wrapping up, press the grapes and transfer to an air tight container like a carboy. The grapes used in this video are concord from the lake erie region. enjoy! Natural Fermentation Grape Juice Wine
Making 1 gallon of Concord Grape juice wine using natural yeast from store bought grapes & juice.
Ingredients:
1 gallon Concord Grape Juice
1 pound (Organic) Table Grapes
1 black teabag
1/4 lemon
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

Another batch of Vintner's Best Strawberry wine looked to be done with the vigorous fermenting that happens during the first week or so. While you can tell by gauging the airlock, a hydrometer is a sure-fire way to know when you can transfer into your secondary fermentation container without overwhelming the airlock and making a mess.
A short video on how to start a wine fermentation. For this video I am using Crushed and Destemmed Grapes and Fermenting on the skins. The video covers steps before fermentation, Starting the wine yeast with some time lapse action, Active Fermentation, and Punching Down. The basic steps are to Sulfite and Add Pectic Enzyme, Balance the acid, Check the sugar, hydrate your yeast, pitch your yeast, punch down once the cap forms and continue to do so two to three times a day. during the fermentation, place a lid or cover loosely on the fermenter to keep fruit flies out. When Fermentation is wrapping up, press the grapes and transfer to an air tight container like a carboy. The grapes used in this video are concord from the lake erie region. enjoy! Making 1 gallon of Concord Grape juice wine using natural yeast from store bought grapes & juice.
Ingredients:
1 gallon Concord Grape Juice
1 pound (Organic) Table Grapes
1 black teabag
1/4 lemon
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

The natural occurrence of fermentation means it was probably first observed long ago by humans. The earliest uses of the word "fermentation" in relation to winemaking was in reference to the apparent "boiling" within the must that came from the anaerobic reaction of the yeast to the sugars in the grape juice and the release of carbon dioxide.
