The Hmong (RPA: Hmoob/Moob, IPA:[m̥ɔ̃ŋ]) are an ethnic group from the mountainous regions of China, Vietnam, Laos, and Thailand. Hmong are also one of the sub-groups of the Miao ethnicity (苗族) in southern China. Hmong groups began a gradual southward migration in the 18th century due to political unrest and to find more arable land.
Hmong (RPA: Hmoob) or Mong (RPA: Moob), known as First Vernacular Chuanqiandian Miao in China (Chinese:川黔滇苗语第一土语; pinyin:Chuānqiándiān miáo yǔ dì yī tǔyǔ), is a dialect continuum of the West Hmongic branch of the Hmongic languages spoken by the Hmong people of Sichuan, Yunnan, Guizhou, Guangxi, northern Vietnam, Thailand, and Laos. There are some 2.7 million speakers of varieties that are largely mutually intelligible, including 260,000 Hmong Americans. Over half of all Hmong speakers speak the various dialects in China, where the Dananshan (大南山) dialect forms the basis of the standard language. However, Hmong Daw (White Miao) and Mong Njua (Green Miao) are widely known only in Laos and the United States; Dananshan is more widely known in the native region of Hmong.
Hmong, in the narrow sense, is sometimes known ambiguously as the Chuanqiandian Cluster. That term is also used for Chuanqiandian Miao as a whole, or it may be restricted to the varieties of Hmong spoken in China.

I wanted my first song to be one you can scream out loud. So I imagined singing my heart out in the rain, (ntawm kuv sab plhu los nag, los yog kuv lub kua mug). Frustrated because you're trying so hard to stop someone you love from leaving and never coming back. "Cheem tau koj" means to stop you, but I also included the "tsis" in "Cheem tsis tau koj", which on the flip side means, not being able to stop you. Which ending is the one for you?

🍠BOILED ELEPHANT FOOT YAM: Cut the elephant foot yam in halves or quarters after cutting off the shell. Use sandpaper to scrub the surface. Pour whitewash water on top to refresh. Wait for 30 minutes, then flatten on a tray. Cut in small pieces then boil in water. Let it rest in cool water overnight for a lumpy texture. Cut it into bite sizes.
🐄BEEF GASTRIC ACID SOUP: Cut the lemongrass, ginger and papaya leaves into thin pieces. Stir-fry minced cow stomach mix with gastric acid squeezed from the intestine and a little bit of water. Add all the veggies in and cook until it boils.
🐖PIG FACE BONE SOUP: Remove the meat from the pig’s face. Cut the bone in small pieces. Simmer overnight to get all umami extraction from the marrow and the bone. Add bamboo shoots in. Serve at the wedding table.

This dish is a hmong food I grew up eating, but I know other cultures have slight variations of this under a different name. Food is something we all have in common, so.. what do you call this?

Don’t be intimidated by this slightly lengthy list of ingredients. This recipe is extremely simple - even a beginner cook can do it! Most of the cooking time is completely hands off and you’ll be left with the most tender pork belly that’s soft enough to be cut with a spoon :)

Growing up in a Hmong household, this dish was a meal that I ate often. It’s salty, tangy, spicy and so so fresh from the mix of herbs.

Laab has several spelling variations (larb, laap, larp) but it’s pronounced “laahp” with a soft h. I call this Hmong food, but others may know it as Thai or Laotian food because each culture shares this dish as their own. Thailand and Laos border each other and Hmong people originate from Laos. So, this makes sense as to why our cuisine is so similar.

BLACK HMONG WEDDING
1. BRIDE’S FAMILY CELEBRATION
ADDRESS: Nam Pang Village, Tu Le Ward, Van Chan District, Yen Bai Province
🐄SAUTEED BEEF: Heat up the cow fat. Add garlic, ginger, Thai pepper (prickly ash seed), pepper, lemongrass and stir-fry for 2 minutes. Add beef and fry until the beef is well cooked.
🐄STIR-FRIED COW ORGANS: Stir-fry cow organs with salt for 1 minute. Add water celery and quickly stir then serve when it is hot.

2. GROOM’S FAMILY CELEBRATION
ADDRESS: Co Mong Village, Tu Le Ward, Van Chan District, Yen Bai Province
🍠BOILED ELEPHANT FOOT YAM: Cut the elephant foot yam in halves or quarters after cutting off the shell. Use sandpaper to scrub the surface. Pour whitewash water on top to refresh. Wait for 30 minutes, then flatten on a tray. Cut in small pieces then boil in water. Let it rest in cool water overnight for a lumpy texture. Cut it into bite sizes.
🐄BEEF GASTRIC ACID SOUP: Cut the lemongrass, ginger and papaya leaves into thin pieces. Stir-fry minced cow stomach mix with gastric acid squeezed from the intestine and a little bit of water. Add all the veggies in and cook until it boils.
🐖PIG FACE BONE SOUP: Remove the meat from the pig’s face. Cut the bone in small pieces. Simmer overnight to get all umami extraction from the marrow and the bone. Add bamboo shoots in. Serve at the wedding table.
