Often known as an incredibly flat province, nothing could be further from the truth. With lush boreal forests and pristine lakes in the North to prairie landscapes and badlands in the South, Saskatchewan is the perfect place for outdoor lovers to explore.
We drove a pontoon boat around Lake Waskesiu, learned about the province's first nations at Wanuskewin Heritage Centre, and went for a float in Canada's version of the dead sea. Melfort is a small city of 6,000 people in the northeast of Saskatchewan. It offers many different amenities like shopping, restaurants, swimming pool, skating rink, golf course and a lovely park. Melfort is a small city of 6,000 people in the northeast of Saskatchewan. It offers many different amenities like shopping, restaurants, swimming pool, skating rink, golf course and a lovely park. The job market is not as vast as larger centers, but it does have quite a few local industries and many opportunities for working in agriculture. Would you live in the small city of Melfort, SK?

1. Saskatchewan is a province in western Canada, the only province without natural borders. It has an area of 651,900 square kilometres, nearly 10 percent of which is fresh water, composed mostly of rivers, reservoirs, and the province's 100,000 lakes. Its name derived from the Saskatchewan River. The river was known as kisiskāciwani-sīpiy ("swift flowing river") in the Cree language.
2. Saskatchewan has been inhabited for thousands of years by various indigenous groups, and first explored by Europeans in 1690 and settled in 1774. It became a province in 1905, carved out from the vast North-West Territories, which had until then included most of the Canadian Prairies. In the early 20th century the province became known as a stronghold for Canadian social democracy; North America's first social-democratic government was elected in 1944.
3. Regina is the capital city of the Canadian province of Saskatchewan. Saskatoon is the largest city in the Canadian province of Saskatchewan.
4. The Athabasca sand dunes, found in the northwest corner of the province near the Northwest Territories, is the most northerly active sand dune formation in the world. The dunes stretch for approximately 100 kilometres along the south shore of Lake Athabasca. They are the largest active dune fields in Canada, and the largest this far north anywhere in the world
5. Did you know there are more roads in Saskatchewan than in any other province in Canada? According to Highways and Infrastructure, there are 26,000 kilometres of highways in the province and a total road surface of 160,000 kilometres – enough to circle the equator four times. When rural and municipal roads are added to the equation, there are over 250,000 kilometres of roads in Saskatchewan.
6. Saskatchewan is the home of medicare, which would become universal health care in Canada. It was started by Premier Tommy Douglas in 1946. Douglas, who was born and raised in Saskatchewan, was chosen as the greatest Canadian in history.
7. Due to an odd combination of geographic and meteorological phenomena, Saskatchewan is known as the sunniest part of Canada. Many places in Saskatchewan have considerably more than 2,000 hours of bright sunshine each year and Estevan, in the southeast, is known as the “sunniest place in Canada,” with an average of 2,435 hours of bright sunshine each year.

► Sichuan Pepper Salt (椒盐)
3 Tbsp sea salt
1 Tbsp Sichuan peppercorns, any type or blend
1/2 tsp msg (optional)
► Sichuan Pepper Oil (花椒油 / 麻油)
3 Tbsp Sichuan Peppercorns, any type or blend
1 cup of oil
1 piece of star anise (optional)
3 slices of ginger (optional)
► Spicy Chicken / Lazi Ji (辣子鸡)
300g chicken, bone in is traditional but I prefer boneless
1 Tbsp Chinese cooking wine
1 Tbsp dark soy sauce
1 tsp grated ginger
1 egg
1/2 cup corn starch or potato starch, or more until nice and thiccc
oil for deep frying
1/2 cup raw peanuts (sub roasted if needed, add later)
1 tsp grated ginger
1 tsp grated garlic
1/2 cup chopped spring onion, white parts
1 Tbsp red Sichuan peppercorns
2 handfuls dried red Sichuan chilies (I love bullet head 子弹头)
salt to taste
1 tsp sugar
sprinkle of msg
little drizzle of sesame oil, 1/2 tsp
1/2 cup finely chopped spring onions, green parts
small (or big) bunch of coriander, cut into 3-4cm pieces
toasted sesame seeds for garnish
► Lazy Cook’s Mapo Dofu (懒人麻婆豆腐)
2 Tbsp Sichuan peppercorn oil
1 tsp grated ginger
1 tsp grated garlic
1/2 cup chopped spring onion, white parts
1 tsp Doubanjiang (豆瓣酱)
1/2 tsp black bean paste (蒜蓉豆豉)
1 block of smoked tofu, cubed and blanched
1 cup water
1/2 tsp corn starch, dissolved in a bit of water
garnish with chopped spring onion, green parts
► Salt and Pepper Shrimp, sort of Cantonese style (椒盐虾)
300g king prawns, deveined. Some like shell on, I like shell off
1 Tbsp Chinese cooking wine
1/2 cup corn starch or potato starch
oil for deep frying

1 tsp grated garlic
1/2 cup chopped spring onion, white parts
Sichuan pepper salt to taste
1/2 cup chopped spring onion, green parts for garnish
1,5 Tbsp olive oil
150g lean bacon
750g beef, stew meat
1 large white onion
2 cloves of garlic
1-2 carrots, in chunks
2 bay leaves
2 sprigs of thyme
2 sprigs of parsley
1 bottle burgundy red wine (or any Pinot Noir)
salt & pepper to taste
7-8 button mushrooms, halved
3-4 very small onions, halved
2 Tbsp olive oil
1 Tbsp butter
1 sprig of thyme
salt, pepper
500g baby potatoes, steamed
for finishing:
1 sprig of thyme
1 clove of garlic
1 Tbsp butter
finely chopped parsley

In Finland, Santa might also be known as Joulupukki! (This really means 'Christmas Goat' as it was traditional in Finland that there was a Yule Goat who was scary and asked people for presents - and certainly didn't give any out!

The reindeer (Rangifer tarandus), also known as the caribou in North America, is a species of deer with circumpolar distribution, native to Arctic, sub-Arctic, tundra, boreal, and mountainous regions of northern Europe, Siberia, and North America.

With regards to riding reindeer, they're a different animal than horses and will have different pros and cons. First off, reindeer, and most other forms of deer, are significantly smaller than horses, so they won't be as agile when they're carrying people. However, they're better adapted to life in cold, snowy areas.
