According to the Whole Grains Council, its prevalence was found mostly in the Aztec empire. It was domesticated about 6,000 years ago! It’s a very special ingredient. The plant has bright, deep pink flowers that contain the seeds. It’s very hardy and can grow to 9 feet tall! Its leaves are also edible.

To celebrate both, we’ll learn how to cook amaranth or amaranto 2-ways.
According to the Whole Grains Council, its prevalence was found mostly in the Aztec empire. It was domesticated about 6,000 years ago! It’s a very special ingredient. The plant has bright, deep pink flowers that contain the seeds. It’s very hardy and can grow to 9 feet tall! Its leaves are also edible.

Popped Amaranth Recipe
Ingredients:
1/2 cup of amaranth
Kitchen Tools:
Wide bottom pan, lid for pan, fine-mesh sieve, bowl, oven mitts, wooden spoon and measuring tablespoon.
Instructions:
1. Heat pan to medium heat for 5 minutes
2. Add 1 tablespoon of amaranth. The seeds will pop in about 5 seconds.
3. Stir seeds with wooden spoon to heat evenly. Use lid to keep as many of popped seeds in the pan as possible.
4. Turn off the fire, pour the popped amaranth into the sieve.
5. Repeat process in batches of 1 tablespoon each.
6. Shake the sieve and allow the unpopped kernels to filter out.
This is ready to be used for alegria, ladoo or topping for soups, salads, desserts.
Stovetop Amaranth Recipe
Ingredients:
1/2 cup amaranth
1 cup water (liquid of your choice)
Kitchen Tools:
Small pot (5.25” in diameter) and lid
Instructions:
1. Add water and amaranth to pot.
2. Bring to boil at medium-high heat (5-7 minutes)
3. Cover and turn temp to medium-low. Let low simmer for 15 minutes.
4. Remove from heat and let sit for 10 minutes.
5. Serve warm.
Amaranth cooking ratio is 1:2. 1 part whole grain, 2 parts liquid of your choice. This cooked amaranth can be loosened up more with more liquid, depending on your preference. It can be used as a polenta substitute; the outer later of vegan/vegetarian sushi; alternative to sticky rice; warm breakfast bowls, desserts, veggie patties and crackers.
Amaranth is a very special and interesting ingredient, so save it for something special or make an intention before eating it to make the meal meaningful.

Amaranth is an ancient grain that doesn't get nearly as much attention as other vegetable garden regulars. Even though Amaranth is categorised as a small grain, it is in actual fact a seed, which means that it is gluten-free and incredibly nutritious. It also shares the same family with another very well known small grain (seed) called quinoa. The differences between the two are very subtle, but it is important that you know these difference so that you can choose the crops that is best suited to your specific needs.
Amaranth needs the warm summer months to grow. This annual is best planted out in early Spring and provides an abundance of gorgeous flowers throughout the summer months. As soon as the flowers have gone to seed the plant is ready for harvest. Before the end of season seed harvest Amaranth leaves can be enjoyed as a very nutritious leaf green, also commonly referred to as Marog, which is eaten in very much the same way as spinach is. The stems are edible and provide a yummy crunch when steamed.

Amaranth is an ancient grain that doesn't get nearly as much attention as other vegetable garden regulars. Even though Amaranth is categorised as a small grain, it is in actual fact a seed, which means that it is gluten-free and incredibly nutritious. It also shares the same family with another very well known small grain (seed) called quinoa. The differences between the two are very subtle, but it is important that you know these difference so that you can choose the crops that is best suited to your specific needs.
Amaranth needs the warm summer months to grow. This annual is best planted out in early Spring and provides an abundance of gorgeous flowers throughout the summer months. As soon as the flowers have gone to seed the plant is ready for harvest. Before the end of season seed harvest Amaranth leaves can be enjoyed as a very nutritious leaf green, also commonly referred to as Marog, which is eaten in very much the same way as spinach is. The stems are edible and provide a yummy crunch when steamed.
