Vegan Tacos Make the Move to Henderson

The first of two local expansions for Pancho’s Vegan Tacos is now open in Henderson, with a second location south of Summerlin also looking to debut soon.

Over the last two years, Pancho’s earned a loyal following on the east side for its “100% vegan authentic Mexican food” at the corner of Pecos Road and Tropicana Avenue and the new location, nicknamed Pancho’s on Anthem, moves into a Henderson retail hub previously home to the shuttered Sai Sushi and Giada’s Italian Cucina.

On the menu, a wide collection of choices, including, tacos, burritos, nachos, tortas, enchiladas, tostadas, sopes, soups, salads, burgers, and plate meals.

Pancho’s has also shared video of the next expansion to 3585 S. Fort Apache Road, unveiling a drive-thru and an almost complete interior.

Pancho’s Vegan Tacos, 2540 Anthem Village Drive, Henderson, 702-462-5371. Open daily from noon to 8 p.m., serving from 11 a.m. to 9 p.m. on Friday and Saturday, and 10 a.m. to 6 p.m. on Sunday.
