INTRODUCTION
The Eggplant (Solanum melongena), Often referred to as brinjal, aubergine, or guinea
squash, it is a member of the Solanaceae family and is part of the larger genus Solanum, which
contains over 1550 species. made a big impact to the taste buds and lives of many people in
our locality. Worldwide, the production and consumption of egg plant have become
widespread. Its strong phenolic acid concentration and antioxidant qualities place it in the top
10 veggies. Many dishes have been created and until now, the dishes is widely used in
restaurants, households and many more.
One of the everyday living problems is that many individuals struggle to consume
enough vegetables due to taste preferences, texture aversions, or convenience factors. This
dietary gap can lead to deficiencies in essential nutrients like vitamins, minerals, and fiber,
which are crucial for overall health. Sometimes they look for another dish instead of eating
that one veggie recipe that is served. To tackle this issue, a group of students have developed
creative ways to incorporate vegetables into various foods, often disguising their presence in
forms that appeal to those averse to traditional vegetable dishes. Students came up with the
idea of making a new recipe out of an eggplant that will surely catch an attention of many
people, an eggplant dish that is fresh and new to their eyes. A food that is filled with ham,
cheese, mashed potato, carrots, and squash, these products are designed to provide the
nutritional benefits of vegetables—such as vitamins, minerals, and fiber while catering to the
taste and texture preferences of those who might otherwise avoid them. It can make those
people crave and enjoy eating it because of its innovative concept as a food, the tempting and
eye-catching looks of this cuisine will make them love to eat the said vegetable and fill their
tummy with great taste and nutrition.

PRODUCTION PROCESS
Table 2: Step-by-Step Procedure of Making Brinjal Roll:
• Prep all your materials and
ingredients to be used

• Wash and peel the skin of the
vegetables
• Cut each into half
• Let the vegetables boil in water

• Cut off the top of the eggplant
and peel it thinly

• Soak the eggplant in salt and
water to lessen the bitterness.
• Measure the sliced eggplant
with the ham and cut the ham
based on the preferred size.
• Cut the cheese thinly
• Put the potato into a bowl and
mash it.
8 • In a different bowl, put the
carrots and the squash together
and mash
• Season each with salt and
pepper and a pinch of garlic
powder
• Prepare the wet and dry batter,
beat the two eggs in the bowl.
10 • In a different plate, put the flour
and season it with salt and
pepper.
• Put the ham and cheese on the
top of the sliced eggplant,
gently roll it and insert the
11 toothpick.
• Coat the Brinjal Roll first into
the dry batter and the wet batter
and into the dry batter again.
12 Repeat the process to the other
batch.
• Fry it with a low heat until
golden brown

• For the dip, mix ketchup and
mayo together. And add salt and
pepper to taste.

Table 3 presents the taste satisfaction result obtained on he sampling of brinjal roll
variety. These feedback from a diverse group of fifteen (15) individuals who participated in a
taste-testing session aimed at evaluating different brinjal roll options. Ham and Cheese got
highest number of votes, totaling nine (9), Squash and Carrots got (4) votes, and Potato got
(2) votes.
CONCLUSION
The Brinjal Roll, an appealing combination of eggplant, ham, cheese, mashed potatoes,
carrots, and squash, provides a delightful blend of flavors and textures. Its innovative concept
addresses the challenge of introducing veggies into meals for people who have taste and texture
avoidances. With its golden-brown bite and delicious filling, paired with a savory ketchup-
mayo dip, it's a delicious snack that promotes health without compromising taste. This unique
dish demonstrates that healthy eating can be both interesting and delicious, instilling an
appreciation for veggies in regular meals. The overwhelming preference for Ham and Cheese
underscores the appeal of classic flavors and familiar combinations. However, the Squash and
Carrots indicates a willingness among consumers to explore more innovative and health-
conscious options. Even the Potato variant suggests that traditional flavors continue to hold
significance for certain segments of familiarity. Overall, the invention serves as a springboard
for future exploration and innovation within the realm of brinjal roll varieties and beyond.
