Learning Outcomes: After visiting the Le Delice - The French Bakery, I learned to develop
my critical and analytical thinking and was able to relate the concepts of asked questions with
real life scenario.
I learned how an outlet does operate its day to day activities and how they achieve their
objectives in time.

To set up this report, I have picked Le Delice - The French Bakery, situated at Boulevard
Road, opp. Ghat No.9, Srinagar, Jammu and Kashmir 190001 which is in front of the
beautiful Lake of J&K, Dal Lake. While setting up this report, Covid-19 standards and SOP
were followed with due alert.

Q1. A brief on your visit and why you selected this location.

Le Delice - The French Bakery is the first of its kind French bakery in Srinagar is run by a
Kashmiri French couple; it’s the aroma of freshly baked French breads and cookies that rules.
And this aroma and the ‘melt-in-your mouth’ cakes and desserts that Saqib Mir, the owner of
this ‘French bakery’, offers has got everyone, from local residents to politicians, diplomats
and tourists hooked.

 I selected this location because of the heavenly taste of the products offered by this
bakery and this bakery is situated in front of Dal Lake which adds five starts to it.
 The products of the bakery are made from the authentic French recipes which give the
customer a chance of tasting French bakery at its own place without visiting France.
 The hygiene is the first priority at Le Delice, and due to this people love to purchase their
products in this pandemic.
 They use premium quality raw material in manufacturing its finish products as compared
to any other bakery in the town.

shop as every single aspect of these cakes is 100% edible in nature. It is the pastry
kitchen's approach: not to utilize show-case treats like plastic models in their cake. The

Q5. How they are doing forecasting for sales etc.? Please suggest a better model for them.

The people are getting health conscious day bay day especially in this Covid-19 period. Thus,
the demand for fast food products which the bakery primarily produces is stalling. The
pandemic has further affected the dining and partying inside the premises of bakery
adversely.

 The forecast for more sales should be mainly emphasized upon the customer’s ever-
changing trends and behavior.
 As people are getting more and more health conscious with each and every passing day:
 Sugar free products should be promoted by the bakery. The option for the Cake to be
made sugar free should be made available. Diet cola could be added in the beverages
section.
 The online local delivery services like Last-Minute, Kart-Food are also contributing in
increasing the sales of the bakery sector.
 The Le Delice has already tied up with local super marts like Pick-n-choose, cash-n-Carry
and should continue to do so with other such startups.

Another factor which can adversely affect the business in the long run is its high costs.
Although the quality of the product is top-notch but the costs of the products is approximately
20 to 30 percent higher than its competitors. The cost factor might not be issue currently
because the products are quiet new in the market segment of Srinagar. But in the long run,
it’s just a matter of time until other emerging players start copying it and eventually end up
adapting it better than the Le Delice that too at lower cost. Consequently, the bakery should
focus on the area of its cost.

To sum up, the forecasting of bakery business depends mainly upon:

 Customer’s taste
 Customer’s preferences
 Customer’s buying habits
 Customer’s behavior
 Competitors
 Availability of alternative raw materials

The business should focus on the aspects of:

 Cost cutting.
 Making the products health conscious and Sugar free.
 Introducing more confectionary products such as Ice-cream.
 Expanding the sitting area due to its increasing customers.
 Tying up with more online food delivery startups.
 Starting up a membership scheme for the regular customers.
 Start taking the bookings of stall for events outside the business premises such as
marriage palace functions.
 Expanding the business to other nearby cities by opening a new bakery under their own
name as the demand for the bakery’s products is significantly huge.
