Pavlova rocky road
MAKES 12 LARGE SERVES PREP & COOK TIME 20 MINUTES (+ REFRIGERATION TIME)
4 x 180g blocks white chocolate, chopped finely
2 tablespoons coconut oil
1⁄3 cup (25g) desiccated coconut, toasted
100g mini meringues, plus extra for decorating
100g white marshmallows
1⁄2 cup (30g) dehydrated strawberries
¾ cup (120g) blanched almonds, toasted
1 Lightly grease and line a 19cm x 29cm slice pan with baking paper.
2 Place chocolate and coconut oil in a large microwave-safe bowl. Cook on MEDIUM (50%) power in 30 seconds bursts, stirring, until melted and smooth. Cool for 5 minutes.
