Ingredients

Original recipe (1X) yields 6 servings

  • 2 tablespoons vegetable oil

  • 1 medium onion, chopped

  • 1 green bell pepper, chopped

  • 1 large carrot, peeled and thinly sliced

  • 3 cloves garlic, minced

  • 2 (15 ounce) cans black beans, divided

  • 1 (14 ounce) can chicken broth

  • 2 cups cubed cooked ham

  • ½ teaspoon salt

  • ¼ teaspoon cumin

  • ground black pepper to taste

  • 1 cup shredded Cheddar cheese

  • 1 cup sour cream

Directions

  1. Heat oil in a large pot over medium heat. Stir in onion, bell pepper, carrot, and garlic; cook until tender, about 5 minutes. Mix in 1/2 of the black beans, then add chicken broth.

  2. In a blender, purée remaining beans until smooth; stir into the pot and bring soup to a boil. Reduce the heat to low. Mix in ham, salt, cumin, and pepper; simmer for 20 minutes. Garnish with Cheddar cheese and sour cream to serve.
