Yummy Vegan Pesto

This is a classic vegan pesto recipe that I love! So quick to make by blending olive oil, pine nuts, basil, garlic, and nutritional yeast to get that cheesy flavor. Very tasty on pasta, bread, sandwiches, omelets, etc.

Ingredients

  • cup pine nuts

  • cup olive oil

  • 5 cloves garlic

  • cup nutritional yeast

  • 1 bunch fresh basil leaves

  • salt and pepper to taste

Directions

  1. Place pine nuts in a skillet over medium heat; cook, stirring or shaking the pan often, until lightly toasted.

  2. Place toasted pine nuts, olive oil, garlic, nutritional yeast, and basil in a food processor; blend until smooth. Season with salt and pepper.

Cook’s Note

Try adding sun-dried tomato slices post-completion for an added boost of rich flavor. 

This pesto freezes beautifully.
