Easy Imitation Lobster Bisque

This wonderful lobster bisque recipe uses imitation lobster. I created it after our store was selling imitation lobster meat at ridiculously low prices. It has become a family favorite.

Ingredients

Original recipe (1X) yields 8 servings

  • 4 medium onions, chopped

  • 1 ½ cups chicken broth

  • 2 cloves garlic, minced

  • 5 tablespoons butter

  • 4 tablespoons all-purpose flour

  • 1 cup milk

  • 1 cup heavy cream

  • 6 tablespoons tomato paste

  • 2 teaspoons Worcestershire sauce

  • 1 teaspoon seafood seasoning (such as Old Bay)

  • 1 teaspoon salt

  • ½ teaspoon cayenne pepper

  • 24 ounces imitation lobster meat

  • ¾ cup white wine

  • 1 pinch ground paprika, or to taste (Optional)

Directions

  1. Cook onions and 1/2 cup chicken broth in a large pot over medium heat for 5 minutes. Add garlic and cook for 2 minutes. Reduce the heat to low, add remaining chicken broth, and bring to a simmer.

  2. Melt butter in a medium saucepan. Whisk in flour until a creamy mixture is created. Gradually pour roux into the simmering broth mixture, whisking constantly. Whisk in milk, cream, tomato paste, Worcestershire sauce, seafood seasoning, salt, and cayenne pepper; cook until thickened, 3 to 5 minutes.

  3. Place imitation lobster in a food processor; pulse about 6 times.

  4. Add imitation lobster and wine to soup; cook over low until heated through, 5 to 7 minutes.

  5. Ladle soup into serving bowls and sprinkle lightly with paprika to add color.
