Original recipe (1X) yields 3 servings 1 tablespoon vegetable oil 3 (5 ounce) boneless, skinless chicken thighs, cut into bite-sized cubes 1 large onion, chopped ¼ cup all-purpose flour 4 cups water 3 cups skin-on cubed potatoes 1 cup diced carrot 1 tablespoon chicken soup base 1 tablespoon herbes de Provence ½ cup diced green bell pepper 1 cup chopped button mushrooms Directions Heat oil in a deep pan over medium heat. Add chicken and onion; cook and stir until browned, 5 to 7 minutes. Add flour; cook and stir for 2 to 3 minutes. Add water, potatoes, carrot, soup base, and herbes de Provence.
