Creamsicle Cocktail

In June 2020, we were still dealing with the Coronavirus ravaging our country, making us a little stir-crazy. Luckily, the lockdown rules were easing in California, and my husband and I could host some good friends at our home for the weekend. The weather was heating up, and while we were spending the day by the pool (pretending we were at a far-off resort), my friend asked if I could make her a foofy drink. I went inside, took an inventory of my ingredients, and created the COVID Creamsicle cocktail recipe.

Ingredients

Original recipe (1X) yields 1 servings

  • 1 fluid ounce good-quality vodka

  • ½ cup ice as needed

  • 1 scoop orange sherbet

  • 1 scoop lemon sorbet

  • 1 fluid ounce lemon-flavored sparkling water

  • 1 fluid ounce orange-flavored carbonated water

  • 1 fluid ounce Prosecco

  • 1 slice lemon

Directions

  1. Pour vodka into a chilled old-fashioned glass or stemless wine glass; add ice. Add orange sherbet and lemon sorbet. Top with lemon- and orange-flavored water; stir together using a long-handled drink spoon until completely blended.

  2. Top with Prosecco; garnish with a lemon slice.

Cook's Notes:

Use plain Perrier instead of orange if preferred.

You can garnish with an orange slice instead of lemon.
