Original recipe (1X) yields 16 servings 5 pounds beef skirt steak, thinly sliced 1 cup water 1 orange, sliced ⅔ cup orange juice ⅔ cup lime juice ½ cup red wine vinegar 1 lime, sliced 1 bunch fresh cilantro leaves, chopped ¼ cup vegetable oil 1 tablespoon salt 3 cloves garlic, minced 1 tablespoon ground white pepper 1 tablespoon ground black pepper 1 tablespoon dried Mexican oregano 1 tablespoon ground cumin 1 tablespoon chili powder ¼ teaspoon ground cloves Directions Place beef in a large resealable plastic bag. Whisk to combine. Pour marinade on top of beef and seal the bag. Marinate beef in the refrigerator, 2 hours to overnight. Preheat an outdoor grill for medium heat and lightly oil the grate. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium.
