Ingredients

Original recipe (1X) yields 6 servings

  • 1 tablespoon canola oil

  • ½ cup chopped onion

  • ½ cup chopped green bell pepper

  • ½ cup frozen corn

  • ½ cup sliced fresh mushrooms

  • 1 (16 ounce) can chili beans

  • 1 (16 ounce) jar salsa

  • 1 (1.25 ounce) package chili seasoning mix

  • 2 tablespoons prepared yellow mustard

  • 1 pinch salt and ground black pepper to taste

Directions

  1. Heat oil in a large skillet over medium heat. Add onion, green bell pepper, corn, and mushrooms; cook and stir until softened and heated through, 5 to 10 minutes. Add chili beans, salsa, chili seasoning, and mustard. Reduce heat to low and simmer, stirring occasionally, until flavors combine, 10 to 15 minutes.
