Original recipe (1X) yields 8 servings 1 pound dried large lima beans (butter beans) 1 pound bacon 4 cups water, or more as needed 1 (12 fluid ounce) can or bottle beer ½ teaspoon ground cumin (Optional) ½ jalapeno pepper, seeded and minced 1 clove garlic, minced Directions Place beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Place bacon in the open pressure cooker and cook over medium-high heat, occasionally turning, until evenly browned, about 10 minutes.
