These date balls are a holiday tradition in our family. My mother made these delicious date balls with pecans and crisped rice cereal every year at Christmas.

Ingredients

Original recipe (1X) yields 24 servings

  • 1 (8 ounce) package pitted dates, chopped

  • 1 cup white sugar

  • ½ cup butter or margarine

  • 3 cups crispy rice cereal

  • 1 cup chopped pecans

  • 1 teaspoon vanilla extract

  • ½ cup confectioners' sugar, or as needed

Directions

  1. Place dates, sugar, and margarine in a large saucepan over low heat; cook and stir until sugar dissolves. Remove from heat and fold in crispy rice cereal, pecans, and vanilla extract until evenly mixed.

  2. Roll date mixture into 1-inch balls using lightly greased hands; allow balls to cool.

  3. Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

Recipe Tip

Store date balls in a plastic or glass airtight container. If the weather is warm, keep them in the refrigerator.
