Original recipe (1X) yields 12 servings 3 cups all-purpose flour 1 ½ tablespoons pumpkin pie spice 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 3 large eggs 2 ¼ cups white sugar ½ cup vegetable oil ½ cup canned or pureed pumpkin 1 tablespoon vanilla extract 2 ½ cups grated zucchini 1 cup chopped walnuts (Optional) Directions Preheat the oven to 325 degrees F (165 degrees C).
