Original recipe (1X) yields 12 servings ¾ cup teff flour ¾ cup brown rice flour ½ cup arrowroot flour 1 ½ teaspoons baking powder ½ teaspoon ground cinnamon ¼ teaspoon ground nutmeg ¼ teaspoon ground cloves ¼ teaspoon ground ginger ¼ teaspoon salt ⅔ cup water ½ cup chopped pecans ⅓ cup olive oil 2 eggs, beaten ½ cup raisins ½ cup golden raisins ½ cup dried apricots, chopped ½ cup dried cranberries Directions Preheat oven to 400 degrees F (200 degrees C). Grease a muffin tin. Mix teff flour, brown rice flour, arrowroot flour, baking powder, cinnamon, nutmeg, cloves, ginger, and salt together in a large bowl. Form a well in the center of the flour mixture. Add water, pecans, olive oil, and eggs to the well. Whisk the wet ingredients into the dry ingredients until batter is fully combined. Fold raisins, golden raisins, apricots, and cranberries into batter. Pour batter into the prepared muffin tin. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.
