My mother and her Hollingsworth family from Georgia traditionally serve oyster stew every Christmas Eve. The red and green colors are Christmas-like. I hope you enjoy it as much as we do.

Ingredients

  • ¼ cup unsalted butter

  • 1 cup finely chopped celery

  • ½ cup chopped green onion

  • ½ cup chopped red bell pepper

  • 2 pints half-and-half

  • 1 teaspoon dried parsley

  • salt and ground black pepper to taste

  • 1 (12 ounce) can oysters, undrained

  • 2 dashes Louisiana-style hot sauce

Directions

  1. Melt butter in a large saucepan over medium heat until it begins to foam. Add celery, green onion, and bell pepper; cook and stir until soft, about 10 minutes.

  2. Stir in half-and-half and parsley, season with salt and black pepper, and cook until just begins to boil. Add oysters, liquid from can, and hot sauce; bring to a simmer and cook until oysters begin to curl, 10 to 15 minutes.

  3. Remove stew from heat; let sit 5 minutes before serving.
