Ingredients

Original recipe (1X) yields 4 servings

  • 1 ¾ cups Swanson chicken broth

  • 1 teaspoon Italian seasoning, crushed

  • 1 cup chopped fresh spinach

  • ¾ cup uncooked long-grain white rice

  • ½ cup grated Parmesan cheese, plus more for serving

Directions

  1. Heat broth and Italian seasoning in a 2-quart saucepan over medium-high heat to a boil.

  2. Stir in spinach and rice; reduce heat to low. Cover saucepan; cook until rice is tender, 20 minutes. Stir in 1/2 cup Parmesan cheese. Serve with additional cheese.
