Original recipe (1X) yields 10 servings 1 pound Irish sausages 1 pound Irish bacon 1 pound potatoes, peeled and cut into large dice 2 large onions, roughly chopped 6 carrots, roughly chopped 1 quart chicken stock 1 quart whole milk salt and ground black pepper to taste Directions Gather all ingredients. Heat a large Dutch oven over medium-high heat. Add sausages and bacon to the Dutch oven; cook until bacon is crisp. Reserve 1 tablespoon drippings in Dutch oven; drain and discard remaining drippings. Crumble bacon; halve sausages. Heat reserved drippings, crumbled bacon, and sausages in Dutch oven over low heat. Add potatoes, onions and carrots; cook and stir until onions soften, 7 to 10 minutes. Stir in stock and milk; bring to a simmer and cook until potatoes are fork-tender, 30 to 45 minutes. Season with salt and black pepper. Cook’s Note This traditional Irish dish is best made with Irish sausage and bacon. If you can't find them, you can use a low-fat bacon, such as Canadian bacon, and a good quality uncooked breakfast sausage.
