I've never had a complaint about these collard greens cooked with ham hocks. The broth comes out like soup. I hear it is an old remedy for whatever ails you.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 quart chicken stock

  • 3 small ham hocks

  • 1 large onion, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon crushed red pepper flakes

  • 3 tablespoons cider vinegar

  • ¼ teaspoon black pepper

  • water to cover

  • 1 bunch collard greens - rinsed, trimmed and chopped

  • salt to taste

  • 1/4 cup hot pepper sauce, or to taste

Directions

  1. Pour chicken stock into a large pot. Add ham hocks, onion, garlic, red pepper flakes, vinegar, black pepper, and enough water to cover ham hocks. Bring to a boil; reduce heat and simmer for 1 to 2 hours to create broth.

  2. Remove ham hocks from broth. Pull meat from hocks. Stir meat and collard greens into broth. Simmer until greens reach desired texture, 1 to 5 hours. Season with salt and serve with hot sauce.
