Salad with Artichokes

This recipe for a salad with artichoke hearts was given to me by a friend, who got it from a little pasta house restaurant in her hometown. It's made with mixed greens, red onion, and artichokes, and tossed in a vinegar and oil dressing.

Ingredients

Original recipe (1X) yields 5 servings

  • 4 cups mixed salad greens

  • 1 (14 ounce) can artichoke hearts in water, drained

  • ½ red onion, sliced

  • ½ cup vegetable oil

  • ½ cup red wine vinegar

  • 1 teaspoon seasoned salt

  • 1 teaspoon garlic powder

  • 1 teaspoon ground black pepper

  • 3 tablespoons grated Parmesan cheese

Directions

  1. Combine mixed greens, artichoke hearts, and onion in a large bowl.

  2. Whisk oil, vinegar, seasoned salt, garlic powder, and pepper together in a separate bowl. Pour desired amount of dressing over the salad, and toss to coat.

  3. Sprinkle with grated Parmesan cheese, and serve.
