It might be a challenge to even step outside in this sweltering summer heat, but baking? Entirely out of the question. When we need the air conditioning on and the oven off, no-bake, no-cook recipes come to the rescue. 

Southerners know this better than anyone, which is why one of our best creamy, cooling summer pies hails from a Southern grandma’s recipe collection. Easy to make and charmingly simple, this dessert’s flavor is, believe it or not, even more memorable than its name: Possum Pie.

What Is Possum Pie? 

Don’t let the name fool you—this pie is 100% opossum-free. And while we’re not exactly sure where the funny name comes from, we do know it will be an instant conversation starter. 

Possum Pie is a classic Southern dessert known for its three layers of luscious filling. Between the tangy cream cheese layer, the smooth, chocolatey custard, the light whipped cream, and the crunchy pecans on top, this pie is loaded with flavor and texture in every slice.

Best of all, the triple-layer treat has some sneaky shortcut secrets. The recipe uses chocolate and vanilla pudding mixes for an extra flavorful custard filling, and a prepared graham cracker crust for ease (remember, we’re not baking a thing here). Homemade whipped cream will always be the tastiest option, but store-bought can also complete the dish in a pinch. This dessert can also be prepared ahead of time and chilled until it’s ready to treat your crowd.

How to Make Possum Pie

“This is an old recipe passed down by my grandmother from Tennessee,” Allrecipes member tawns shared. It’s “light but decadent in flavor,” they added, and perfect for crowd-pleasing in the summer heat. 

To make it, start by beating cream cheese and confectioners’ sugar together until smooth. Spread the mixture onto the bottom of a prepared graham cracker crust (or regular pie crust, as some reviewers prefer), and sprinkle with chopped pecans.

Next, prepare the pudding layer by beating together chocolate and vanilla pudding mixes, milk, and vanilla extract. Once the mixture is combined, spread that layer evenly on top of the pecans. Then, allow the dish to chill for at least 2 hours. 

Finally, top it off with a layer of whipped cream and decorate with chopped pecans or pecan halves. Add this effortlessly elegant pie to your next potluck spread, and you’ll find out why it’s been loved for generations.
