Martha Stewart Shared Her Trick for Making the Fluffiest, Fan-Favorite Baked Potato at Her Restaurant

Take Martha’s Smashed Baked Potato. Sure, it’s a baked potato, but it’s one of the most loved things on The Bedford’s menu. Why? Because of the technique Stewart uses to create the fluffy spud—oh, and maybe because of the crème fraîche, chives, and bacon on top. But mostly because of the fluffy potato.

Martha Stewart's Tip For Fluffy Baked Potatoes

In a recent TikTok video, Stewart shared her secret to making the fluffiest baked potato—it’s the one used at her restaurant in the Paris Las Vegas hotel and the one she’s been using for years.

“One reason The Bedford in Las Vegas is popular is because we have this smashed potato,” she says in the video.

And it really is all about the smash—literally. To get the fluffiest potato, according to Stewart, cut a small slit in the cooked, “boiling hot” potato (Stewart uses an Idaho potato), then place it in a kitchen towel, and smash it onto the table.

“That smashing breaks up all the fibers and makes the potato a delightful, fluffy creation,” she explains.

She ends the video by adding a dollop of crème fraîche and a large helping of Black Diamond Ossetra Caviar, which is also available at The Bedford but for a much higher price tag than the regular $15.95 baked potato. Though, you can top your extra-fluffy baked potato with whatever you like.

Stewart has been using this trick, which she says she learned in Maine, for years. It’s become famous as her signature technique—and is showcased at The Bedford anytime a customer orders her Smashed Baked Potato because the potato is smashed and prepared tableside.

However, now, you don’t even have to travel to Las Vegas to try the iconic baked potato. Just grab a kitchen towel and get smashing.
