  • Do not peel Italian squash. Cut in quarters and boil until almost tender, about 10 mins. Transfer drained squash to 9 x 13 baking dish. Melt butter, mix in cheese, sour cream, salt & onion. Pour over squash, dot with butter and sprinkle with grated Parmesan & bread crumbs. Bake at 350 for 20 to 25 mins.
