For the rice I threw all ingredients for it in my rice cooker, came out fine. May 2024 Missing something The fish and rice are fantastic, but the salsa recipe is missing a whole lot of ingredients. I looked up another to use but Mango butter and sugar is a salsa? April 2024 This fish was very good but with a couple of tweaks it could be excellent. Unlike many reviewers, I followed the recipe to a "T" and encountered a couple of problems. (1) 2 cups of water is not enough to fully cook the rice even after adding an entire can of coconut milk. I ended up adding another 1/2 cup water after the coconut milk to ensure the rice was cooked. (2) skip the green onion in the marinade. The sliced green onion ended up burning in the broiler. I would just scatter them over the rice when plating. (3) the salsa is very simple as written. Just mango, butter and sugar. It needs the added ingredients others have suggested -- red onion, maybe peppers, some cilantro and maybe some lemon or lime juice. We will definitely be having this dish again, with the above changes, because even my fish-hating daughter loved it! I modified the recipe a little based on some reviews- added one extra clove of garlic, ginger powder, some red pepper flakes, and some salt and pepper. I also combined everything together instead of adding the ginger and garlic to the oil. I used about 2 teaspoons of potato starch as I'm allergic to corn. I also added 2/3 cup beef broth to extend the sauce. Will definitely make again! I also added extra garlic and honey along with adding some fresh ginger (still added ground ginger). This was delicious! Served over rice with steamed broccoli and cauliflower. I made them in little mini muffin pans to keep portion control down when eating them (baked at 350 for 15 min). I didn't have any apples in so I used some shredded zucchini that I had frozen from my garden this past summer. I'm looking forward to making them again with apples. Other than being a little on the salty side it was an amazing soup! I loved the depth the chicken stock added. Thanks for an awesome recipe!
