  • In the bowl of a food processor, pulse the butter and flour until it looks like coarse crumbs. Set aside 2 cups of this mixture for topping.

  • Add 1 cup sugar, oats,baking soda and pecans. Pulse just to mix.

  • In a medium pot, add the blueberries, cornstarch, remaining 1/2 cup sugar and orange juice. Cook on the stove top until combined and bring to the boil. Cook for 2 minutes stirring frequently. Remove from the heat and set aside.

  • In a 13x9 greased pan add the crumb mixture and press down.

  • Add the blueberry mixture and spread all over the crumbs.

  • Add the remaining crumb topping and smooth over the blueberries.

  • Bake in a 375 degree oven for 20-25 minutes or until lightly browned.

  • Cool on a wire rack then slice into bars and enjoy.

Tips

Any berry can be substituted for the blueberries. If no food processor is available just cut the butter into the flour in a large bowl. Then add the remaining topping ingredients.
