I salted the eggplant, let it stand, and then washed it first to help remove bitterness. Other than that, I followed the recipe. The first time I put the bread under the broiler, it burned black. So, 2-3 minutes is too long if you have an actual broiler! I tried again, and it was nicely toasted at about the 1 minute mark. The sandwiches were very good! I think you can use as much of each ingredient as you want to make it your own. I might make it again and use a little more herbed cheese and a little more tomato.

I used peaches instead and it was amazing!

Loved this recipe. Made a few tweaks. Slice the onions instead of chopping them to save some time. After marinating the chicken added the chicken and marinade to the pot at the same time. Again to save time. Did not fry the potatoes separately but added the potato to the pot and after adding a little water simmered on medium low heat with a lid on. I substituted the black pepper with Kashmiri chilli powder. If you don't have white vinegar you can use tamarind water.

I have an abundance of blackberries this season so I thought I'd give this a try. It was good, my family quite enjoyed it. I did change a few things. I used half white sugar and half light brown sugar and I added a teaspoonful of vanilla to the batter. I also melted my butter in the baking dish while the oven was pre-heating. Very easy to prepare, I will probably use this recipe again.
