I stumbled on this recipe when looking for something different to do with barley. I made this for dinner and served with some French bread. I will make it again, the soup has a different flavor, but good. It was easy , but next time I will make sure I leave enough time and start cooking a little earlier. (my fault, didn’t see the cooking time). I did add some cooked chicken thigh meat, was fine!

I had never heard of this soup before but so glad I made it! I only had regular barley so I used that instead. Nice, interesting combination of flavors that were hearty and had great flavor! I didn't have sour cream this time and look forward to trying it with a dollop next time! Will definitely make again!

Very good and tasty. Not as much tomato flavor as I thought this might have but that is not a bad thing since all flavors blended well. A winner. (since I did not have basmati rice on hand as suggested, I used long-grain white rice with added lima beans)
