Rather than stew meat, I purchased the chopped "taco meat" from the grocery store. Decided to serve with street taco tortillas and all the fixings.....loved the ease and flavor of this recipe! There were no left overs. I used thighs instead of legs, 1/2 cup of water and added onion powder, red pepper flakes and ranch seasoning to the other seasonings. I baked for 1 1/2 hours at 425. I left it in the oven until I served it. Very much enjoyed. The only thing I did differently was cook the stew longer and added a little bit of cayenne pepper. The type of green salsa you use may make a difference in taste too, but otherwise everything is good! It came out pretty good. I left the wine out as well as the water and mushrooms. I think I will add garlic next time to the meet mixture. I didn't use fresh herb and just used the dried ones in my cabinet. I also used low fat cottage cheese instead of ricotta. This was only because I couldn't get low fat ricotta or organic which I also try to get if possible. One note though: I made a small pan of it and halved all the ingredients. There wasn't enough to complete all the layers. Next time I will use the full amount even for a smaller pan. I would also double the cottage cheese/ricotta as I used the full 16 oz in the half recipe and still didn't have enough to complete both layers. If you love cheese then you will also use the full 16 oz for the half recipe as well. Very glad I found this recipe. Thanks!!!! Helpful (0) Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever. 02/17/2013 I made this cupcake for a good friend's birthday party. These were absolutely amazing. I made my cupcakes with 1/3 brownie on the bottom and Strawberry cake on top with a cream cheese icing. I cooked my cupcakes for 25 mins at 350 degrees. Please note that the brownie is going to be soft and gooey. I love it like that and so did everyone else but anyone that is squimish about brownie batter that isn't fully cooked might want to cook just the brownie in the oven for a bit before adding the cake batter. I also tried putting only a little brownie on the bottom instead of 1/3. I found that the brownie still stayed gooey and when unwrapping these cupcakes the brownie stuck to the foil cups. All the cupcakes that had 1/3 of the brownie came out of the foil cups without a problem. I will definitely make these again and have been deemed the "cupcake maker" of the family now. Helpful (2) Spaghetti Squash Saute 11/07/2011 MADE THIS FOR THE FIRST TIME AND IT CAME OUT REALLY WELL. MY BF IS DIABETIC SO WE MADE MEATBALLS AND SAUCE AND SERVED THEM OVER THE SPAGHETTI SQUASH. WE BOTH LIKED IT AND IT IS A GREAT ALT TO PASTA FOR HIM. Helpful (4) Meatball Nirvana 11/07/2011 I made this last night. I followed the recipe almost exactly except I used half lean ground beef and 1/2 ground pork. It came out really well. I did use all the red pepper flakes and the hot sauce and it was a bit spicy for me. I really liked it but next time I might cut the spice in half. My boyfriend likes spicy food and it was just fine for him but he agreed if we make it for anyone else we need to cut the spice is half atleast. I also cut the salt in half since we were also using garlic salt and the worcestershire sauce can be salts as well. I may add in the salt next time to see if it makes a difference. I didn't notice the recipe lacking salt and it wasn't too salty. I baked these in the oven for 20min and then simmered them in a pot of tomato sauce for about 40 minutes. I served it over spaghetti squash, as my bf is diabetic and served broccoli and cheese with it. I would definitely make this again. Very good meatball recipe. Helpful (2) Best Ever Jalapeño Poppers 06/26/2010 I made this as an appetizer for my nephews first birthday. It was awesome. I changed only a few things. I didn't put as much cheddar cheese as was called for because I didn't have it. Next time I think I will put the right amount and see how much chessier it is. I also baked these instead of frying them. I made them ahead of time and baked them at 350 for 20 minutes then I let them cool and froze them. The night before the party I let them thaw and baked them the next day at 350 for about 25 minutes. I also sprayed them with cooking spray before baking them so they would get a little crispy. These came out awesome served with some buttermilk ranch sauce. I made about 70 and they all disappeared.
