REALLY good with a few adjustments. I added a chopped green pepper to the onion and meat. Sprinkled shredded cheese over the top at the end ... mozz or parm. For the tomato/beef sauce, I used a pound of ground beef and 2 cans of tomatoes...adjusted the seasoning accordingly for this...making more allowed for a layer of the sauce, not just a sprinkling. delish. Helpful (0) Apple-Cranberry Salad 09/26/2012 This was pretty good, but really missing something. I think the dressing needs a little sweetness to it...maybe some honey wisked into it? We ended up using WAY more blue cheese than called for to add some more flavor. I would suggest doubling the blue cheese, wisking some honey into the dressing, and only using tart (maybe green) apples. We enjoyed this, but expected better. I pre-baked the meatballs for 12 minutes before adding them to the soup. I used a large can of sliced carrots and also used both penne and the shells. SO good with Garlic Ciabatta bread.
