Everyone who has tried the sweet pickles ive made loves them. Only thing is i make them with lemon cucumbers. And 1 batch = 1 quart jar completed. I did use a salt water soak on the cucumbers (1 tbs. salt to 2 cups water) for 6 hours before making the recipe so that the pickles kept their crunch, and I did a 10 minute hot water bath for canning purposes. I also used a regular onion instead of a sweet one. And I let the pickling liquid cool before adding it to the cucumber and onion. Still came out tasty. I want to make this again! I drained the ground beef and did not add the olive oil. I used two carrots because I was out of green pepper. I noticed it was quite dry before I put it in the casserole, so I added enough sour cream to make it moist enough to bake without drying out. I used about six smaller potatoes. The crispy potatoes combined with the creamy filling was delicious! Helpful (1) Butternut Squash Bisque 07/16/2006 This is awesome. Since I am knife challenged, I split the squash and scoop out the guts and cook in a 350 oven for about 30 mins per side. After the first 30 minutes I start making the soup. When the squash is done, I let it cool, then scoop into the soup and mush it all with a potato masher. I usually use half and half instead of the cream. A very good recipe. Helpful (3) Pineapple Upside-Down Cake II 01/23/2006 I gave this a five star rating, assuming the amount of butter was incorrect. I used 1/2 cup butter total. I little more than 1/4 cup for the cake and the remainder for the topping. I used 1/2 milk and 1/2 pineapple juice for the 3/4 cup milk. This cake was okay the day I made it, but it was awesome the next day. So, if you need a make ahead dessert with ingredients you have on hand, this might be the ticket! Helpful (44) Angel Biscuits 12/01/2005 After reading all these reviews, I guess you will either love these or not care. Unfortunately, I fell into the latter. The ratio of wet to dry made a very wet batter that I could not knead nor roll out. I ended up making drop biscuits as I was out of flour after the five cups called for in the recipe. On the plus side, these made a lot. On the negative, mine never rose, they burned on the bottom and were somewhat undercooked in the middle. Helpful (0) Green Tomato Mincemeat 10/31/2005 This is really great! I scaled the recipe back to 4 servings to make and see if we liked. I didn't have any oranges so I put in more lemon. I used it to bake a pie and it was awesome. I plan to make more and freeze it instead of canning. I did cook uncovered for the last hour because it was really juicy. Helpful (48) Pumpkin Apple Streusel Muffins 10/26/2005 Oh so very good! The batter is thick, but resist the temptation to add more liquid. It turns out fine as written. As far as the topping goes, pay attention as the recipe calls for 4 teaspoons of butter. I suppose if you put in 4 tablespoons, it would be too much. Thank you Jan!
