I didn't have any problems with it being grainy but I do have a stand mixer with the whisk attachment and let the eggs whisk up for 5 mins a piece. Not disappointed I made a half batch and it still made 9 good size muffins. Will make again friend at work says she freezes extras so im trying that out. Helpful (6) Magic Peanut Butter Middles 02/21/2011 These tasted very good! I made almost exactly as described except adding a tbsp of milk to the cookie batter. It did help to kind of pat the cookie mixture out and roll it up around the peanut butter ball. I didn't refrigerate or anything and didn't run into problems. These set up like a normal peanut butter cookie which slightly harden more while cooling so don't be too tempted to leave them in much longer than the 7-9 mins. I used the make without bread machine method of dissolving about 2 and 1/4 tsp of active dry yeast in the warm milk before adding all the other ingredients in my kitchenaid. after kneaded well with the dough hook i covered it and put it in the 200degree turned off oven for a hour. I then turned on to a floured mat and covered for another 10mins. Then rolled it out as instructed in the directions.followed the ingredients for the roll perfectly! I placed them in the baking dish on parchment paper and sprayed it for good measure. Placed it in the fridge overnight and left it covered with a towel on the oven in the morning while it preheated to 350. Baked for about 25 mins I would say. On the frosting I used 4oz's of cream cheese because thats what I had left over from another recipe and used the same amount sugar and other ingredients. I did turn it out on a baking sheet lined with tinfoil for easy clean up and dripped all of the goodness on top of it. I then used a rubber spatula to spread the cream cheese over the top. So Yummy! I added the suggested 1/2 cup semi sweet chocolate chips and yes it was a very thick batter but it made it thick enough that I could press it into my pan with my hands. I used a 8 X 12 pyrex dish and used a single batter didnt double like a lot of people did and it came out fine however I wouldnt want to go much bigger than that. Keeping this recipe pretty yummy.
