jkcooks Ratings & Reviews 57 New Year's Day Black-Eyed Peas 01/02/2013 These were so delicious! I followed the recipe pretty closely, but I subbed minced, fresh garlic for garlic powder. I also added a few dashes of cayenne. Other than that, I followed exactly. I love that it calls for ham, as I had some leftover Christmas ham that needed to be used. I soaked the peas for 6 hours in cold water before cooking, and they only took about 45 minutes to cook. Happy New Year! Helpful (2) Buttermilk Pancakes 09/05/2012 This recipes requires zero tweaking. Period. I did halve the recipe for my family of 3, and we didn't quite finish them. I used a 1/3 cup to measure out each pancake and got about 9 pancakes out of half a batch. They are hands down the best I've ever made, and my husband says the best he's ever had. I take the pretzels, dip them in the caramel, roll them in nuts after it's set up a bit, and then generously drizzle white and semi-sweet chocolate over the top. perfect for gifts. Helpful (6) My Amish Friend's Caramel Corn 12/11/2011 To test this recipe in preparation for Christmas candy making, I divided the original recipe by 4. I used butter instead of margarine, but otherwise followed the recipe exactly - including cooking time. The result was perfectly crunchy, salty-sweet, light caramel corn. It tastes very much like crunch and munch actually - which is what I was going for. Well, this actually tasted better. It's really good. This is really delicious, and I do recommend letting this set for 24 hours before you serve - for consistency and flavor. Helpful (2) To Die For Blueberry Muffins 04/18/2011 I made thse according to recipe, although I did add just a bit more milk, and I think they definitely live up to their reviews. They are moist, delicious, and probably the easiest muffins I have ever made. I didn't even use a mixer. I did not add vanilla, but I may next time just to see what it does for them, but they definitely don't NEED it. Unfortunately, I forgot the cinammon in the topping, but it was still delicious. Next time! Oh, definitely use liners. Even though I used a generous amount of baker's joy, they stuck to the pans a bit while pulling them out. Helpful (3) Slow Cooker Texas Pulled Pork 03/29/2011 I have been very loyal to another pulled pork recipe on this site until I came across this one and decided to give it a whirl. So glad I tried it, it's delicious! I added 2 tbsp of liquid smoke to the sauce mixture and it was perfect! Definitely reduce the sauce before using it on your sandwiches if you like a thicker sauce. Helpful (5) Apple Muffins 01/25/2011 Yum! These are very good as is. I wouldn't add cinammon to the batter because there is sooo much in the topping already. It does make a generous portion of topping, but I used nearly all of it. Each muffin's top was completeley covered by the struesel and it was great that way. It reminded me of a Dutch Apple pie with the crumb topping. The only thing I would change mext time is to use one tart apple (granny smith) and one sweet. I used two sweet apples (junami) and wished I hadn't because the contrast would have been nice, and more true to the apple pie flavor.
