September 2024 I thought this was very good but hubby was not as pleased. The spice mix is not overpowering and tasted good. The sauce kicks the flavor up a notch. It was done in the time stated with the chicken tender and flavorful. Hubby didn't care for the roasted veggies but I liked them. It did not take very long to assemble either. Great flavors Easy to follow Worth the effort The only change I made was to use part marinara and part tomato paste because I had leftovers of these two items that I needed to use up. The moisture from the cooking zucchini pulp diluted the paste just right. I used sweet Italian sausage and otherwise followed the recipe exactly. It tastes fabulous! It smells great too. Easy, and it went together quickly too. It is packed with flavor. I am diabetic so the rice was not for me, but I had some regular cooked rice and added that to a portion of the skillet for hubby. The rice tempered the spiciness just right, and sour cream did that for me. Hubby went back for a second helping and put it in a tortilla as there was no rice and said it was delicious that way too. I will be making this again and again. I also love that it is a one pot meal. Great flavors Easy to follow Worth the effort I needed a quick meal for chicken and this was great! It is easy to make, quick, and delicious. I served it with smashed potates and a summer vegetable tian. Lovely meal! Helpful (2) Fresh Vegetable Salad 05/19/2024 I didn't make this for a long time after saving it. I just kept passing it over. But then I made it and loved it! It is one of my favorite salads for daily lunches. The flavor is great and is a good compliment to any meat. It helps me stick to my eating program. I find it very satisfying. Helpful (0) Stuffed Zucchini 06/22/2023 I found this very delicious, hubby did not care for it but he is not a big fan of zucchini. I did not use breadcrumbs as I am diabetic. I assembled them as stated but baked them uncovered to cut down on the liquid. I also drained off some of the liquid before adding the sauce at the end. Easy, few ingredients and great taste-thanks!
