I followed the suggestions of several other reviewers and put the chocolate chips in the bottom of the pie rather than mixing them in and I added about 1/2 cup extra pecans. It was delicious and really very easy to make. He LOVED it. Definitely will be making this again and again. This frosting is a great finish to a fantastic carrot cake recipe. A winning combination for sure! I made a double recipe of this delicious cake for my husband’s surprise birthday party. I followed the recipe exactly except for omitting the raisins because he’s not a big fan of raisins. The cake turned out great and was praised by everyone at the party. I even had people asking to take some home so they could have more later. I used the Cream Cheese Frosting II from this site. Before I added the nuts I took out enough batter for a few cupcakes because I have a granddaughter with a serious nut allergy. I then added the nuts to the rest of the batter and baked. Using a double recipe I had enough for 8 cupcakes, a 9 x 13 pan and an 8 x 8 pan. Since I was using glass baking dishes I lowered the oven temperature to 325 and I think the cakes baked for about 45 minutes. This is a great recipe and will be my go to recipe for Carrot Cake. Helpful (0) Good New Orleans Creole Gumbo 10/15/2018 I made this for my husband who is a huge fan of Cajun and Creole foods. He raved about it and even my son who has a very limited palate (he doesn’t like anything) enjoyed it and asked to take a container to work for dinner tomorrow. I didn't have bacon grease so I used butter like several other recipes suggested. It took at least an hour to get the roux a good peanut butter color. I followed the recipes except that my husband asked me not to make it too spicy so i cut the Tabasco down to 1 T. and I also shredded a roasted chicken and added that to the gumbo. This recipe is a definite keeper and the recipe I will use whenever my husband gets a craving for some gumbo. Thanks you for this recipe. Helpful (0) Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano) 08/13/2018 I made this twice in the past month for dinner guests and received rave reviews from everyone. The first time I followed the recipe and directions exactly and it was great. The second time I made it I cut the amount of Tapatio down to 1T instead of 2 because our friends don’t like really spicy food. The second time I also bought about 1/2pound extra of shrimp and after dinner there was still quite a bit of the cocktail sauce left so I added the extra shrimp and had plenty of leftovers for us the following day. This recipe is a definite keeper that I will make again and again. Helpful (1) Awesome Sausage, Apple, and Cranberry Stuffing 12/01/2010 I have been making my same basic stuffing every year since 1972 and after seeing this recipe decided to try something new this year. As the name says, this is an awesome stuffing recipe. I used ready made Pepperidge Farm Cubed Stuffing, the Jimmy Dean Sage Sausage and fresh herbs instead of dried as suggested by many of the reviewers. This was great and the whole family loved it. My husband said it is much better than my traditional stuffing which he has always liked. What I liked is that it was really good reheated the next day which made me sorry I didn't make a double batch for Thanksgiving. Give this recipe a try and you won't be dissappointed. Helpful (5)
