I found this to be entirely average. Not bad but not worth 4 hours of waiting. I suspect that the extended simmering time only serves to drive off some of the subtle flavors and that half the cooking time might be adequate.

I used white rice flour for the roux instead of wheat flour, due to an allergy, in the same proportions. It worked great. Everyone in our family of 6 liked this, even our fussy eater. I didn't have enough time to let it cook as long as recommended, but it didn't matter; it was still delicious. We just returned from a vacation in New Orleans and everyone agreed that this was as good or better than what we ate there.

This was excellent! Anyone squeamish about wild game will soon forget their apprehension after tasting this pie. About the only thing I might change next time is that, since I had a lot of filling left over, I might try to make two regular depth pies instead of one deep dish pie.
