This is a sauce I make on football game days. Start it early and let it simmer all day to the consistency you like. It makes the house smell wonderful!

  • Mince onion and garlic and saute in the olive oil in a large sauce pan till onions are translucent.

  • Add tomato sauce, puree and 2 cans of water.

  • Simmer on low heat for one hour.

  • Add salt, pepper, brown sugar, oregano, parsley, bay leaves, basil and chives.

  • Simmer all day, instructing everyone in the house to stir when they pass through the kitchen. This will reduce the sauce and make it thicker.

  • One half hour prior to serving stir in the parmesan cheese.

  • Serve over favorite pasta with meatballs and garlic bread.
