When i read the ingredient list i thought this would make way too many cookies, but turned out to be about 6 dozen large cookies. I added half tsp additional vanilla and eighth of a cup additional sugar. The dough was easy to roll and cut out and they really didn't spread at all. It was delicious and was a big hit with my children. Great flavor! Next time i will add a bit more lemon juice. Helpful (0) French Crêpes 08/24/2013 This was a great recipe. It was simple to make and my family loved them. I added a teaspoon of powdered sugar and a half teaspoon of vanilla for a bit of a sweeter taste. It was a bit better than the first batch I made following the recipe exactly. The consistency of the batter was great and the crepes cooked up well. This is my crepe recipe from now on. Helpful (0) Coconut Chicken 02/26/2013 I really liked this recipe as a base. I bought some coconut for another recipe and needed to find another way to use it up. This worked. I of course pounded the chicken out so that it cooks quicker and stays moister. I used flax as an egg replacer and mixed it with the soy sauce and lemon instead of lime. I mixed the marinade in with the flax to coat the chicken and just used panko/coconut to coat. The breading adhered beautifully. I used sour cream instead of mayo and added a bit of soy sauce to the coconut cream sauce topping. It was not bursting with taste but had a very pleasant and mild coconut flavor. I probably won't make the recipe again because my kids didn't care for it. More for an adult palette. Helpful (2) Turkey and Quinoa Meatloaf 12/03/2012 First thing I heard from the kids when I told them I was making meatloaf was "ew gross!" Ummmm.... They flipping LOVED it!!! All my girls cleared their plates. I adjusted the recipe as follows: left out the onions and garlic because I didn't have them on hand. I used 1/2 cup of quinoa rather than 1/4 cup. I believe it made the loaf firmer. I added garlic salt and some beef seasoning rub that I had on hand and used franks red hot in place of the chile sauce. I added about 2tablespoons of tomato paste to the glaze and cooked to melt the brown sugar. It tasted like homemade BBQ sauce. All in all this was a hit at my house.
