Very delicious. Better than some we bought from an Argentinian bakery. But I don’t live somwhere where Goya discs are easily found so I used 1 can of Grands biscuit dough which yields 8 biscuits or 8 large empanadas. I used a plastic empanada press so I wouldn’t have to manually pinch the edges. Don’t forget to drain the meat of grease after you brown it. The recipe left that out. The filling can be made 1-day ahead. I fried 2-3 empanadas at a time in a 4-qt pot. I have a family of 4. Two empanadas per person and a side of Spanish rice was a satisfying meal.

I loved it! It is enough filling for 2 deep dish pie crusts. When I baked it all in 1 deep dish crust, it took 65 min to set so I definitely recommend using 2 deep dish crusts. I also put a layer of chocolate chips on the bottom as another reviewer suggested. With everything else, I did exactly as the recipe says. Before this recipe, I made a chocolate chip pecan pie without bourbon every Christmas and it was good. But I’m not going back. Serve it à la mode!!

This really is a fantastic recipe, so easy and creamy. However, it needs to be tweaked just a bit. For example 1 tbsp of butter is plenty, no need for 2. Also, 1/3 cp of sugar is plenty. It’ll still be sweet. And because I’m lactose intolerant, I subbed the milk with 1 can of coconut milk (well blended). To add to the deliciousness & because I was going to freeze the pudding to make pops, I added shredded coconut & coconut extract to the pudding before freezing. It was excellent. Next time, I’ll add dried cherries instead.

Delicious but there are a few errors in this recipe. recipe says “lightly floured surface” but you’ll need more flour than that. Do yourself a favor. Cover the area with parchment paper where you plan to knead, cover that with 3/4 cup flour (but keep an additional 1 3/4- 2 cups on hand in a bowl) and add to that from bowl as needed. Then knead dough directly with rolling pin. Wax paper between rolling pin and dough is not necessary. I found no “Duncan Hines Moist Deluxe Spice Cake” mix at neither Target nor Market Street. But at the latter, I did find Duncan Hines Signature Spice Cake mix. All errors considered, I’d still make this recipe again as it was very tasty. However, personally, I preferred the cookies that I didn’t roll out as thin as 1/4 in. because I like them more soft than crunchy.
