August 2024 My adaptation to this recipe is using Colby Jack cheese, 1 Tablespoons fresh onion, clove of garlic and for the spice I used taco seasoning and fresh ground pepper. I will say that the shrimp I used was already marinated for fajitas so I'm sure that added to the flavor and I didn't cook it with the chips because I burned the chips the first time. I just made it kind of like a dip the second time and the many times after that. All other instructions were followed and it's always a hit. Like a stuff your face as fast as you can to get more before someone else does hit. I substituted a Colby cheese mix vs. Monterey Jack. And instead of quartering the shrimp I chopped them my blender. But neither of these changes altered the recipe. Again my company really enjoyed them. The recipe does make extra so I am freezing the rest and see what happens. Halved the recipe because there where just the two of us. Didn’t use the ancho chilis, but just sprinkled some ancho chili powder on it. We felt very decadent eating it! The favor was fantastic. I was looking for an easy gumbo recipe after my 8-year-old loved the gumbo at a Bubba Gump restaurant. (Who'd have thought?) I had never made gumbo before and some of the recipes just look so laborious. This took a little time but was so worth it! Everyone loved it! The only change was I added a can of diced tomatoes and I used half a cup of canola oil and half a cup of butter for the roux, just because I think roux should have butter in it and I can't help myself. The Cajun seasoning I had was Tony Chachere's Original Creole seasoning and I only used one tablespoon of it because I didn't want it too spicy and people could add more after if they wanted it hotter. I served it with Jasmine rice and garlic bread. Really happy with this one! Helpful (1) Parmesan Fondue 01/02/2018 I doubled this on New Year's Eve using half Parmesan cheese and half Asiago and it was delicious! I kept it warm in a little slow cooker and served it with French bread and rosemary focaccia squares and little carrots. My nephew loves Asiago cheese and he loved it. Helpful (0) Slow Cooker Salisbury Steak 09/28/2016 We really liked this as is the first time I made it. Yesterday I made the sauce and put it in the slow cooker with frozen cooked meatballs instead of the patties. I put it all in about 2:30 on high for an hour, then switched it to low for a couple of hours. It was delicious with the meatballs and so easy. It is a bit salty, but it's better when served over noodles or rice. Helpful (0) Easy Swedish Meatball Sauce 12/28/2015 This was so easy and yummy! Even my 5-year-old scarfed it down! I used chicken stock because that's what I had on hand and a sauteed onion. I ended up using a whole 20-ounce bag of meatballs because there was plenty of sauce and I wanted leftovers. Loved this simple delicious recipe! Helpful (0) Shrimp Nachos 08/22/2015 I'm the submitter of this recipe. I actually submitted this recipe six years ago. I had forgotten all about it when I got the email that it was published. Better late than never! Thank you, AllRecipes! Anyway, I do a couple of things a little differently now which I thought I would share. I now use a Colby Jack mixture of cheese instead of straight Monterey Jack. They're less greasy that way (not that this is health food by any means!). They unfortunately don't make the McCormick white and green minced onion blend anymore, but plain dried minced onions work just fine. Make sure to use the minced and not the white/green onion powder blend! And I now like to use the scoop tortilla chips because the mixture won't run off the chip. If not, try to find the thickest tortilla chip you can. They hold up better that way. Enjoy! Helpful (28) Basic Microwave Risotto 03/23/2015 This was creamy and delicious. I sauteed the onion and garlic with a pint of mushrooms, then added the vegetable broth to that, then added the rice and moved it all to the casserole dish. Instead of 3/4 cup of wine, I used 1/2 cup wine and 1/2 cup heavy cream to make it nice and creamy. My mom couldn't believe I made it in the microwave and wanted the recipe. Score!
