I would suggest adding more pineapple and cutting back on the sugar. It was a little too sweet for my taste, and the pineapple flavor was nonexistent. Pretty average zucchini bread. I didn't change anything, just added a cup of chopped thawed strawberries to the batter for some strawberry lemonade cupcakes. These were nice and tart, but a little too sweet for my taste.
