  • Preheat the oven to 400F. Line 24 mini muffin tins with paper liners OR grease 24 mini muffin tin cups.

  • Mix the dry ingredients in a large bowl.

  • Mix the wet ingredients in a different, medium-sized bowl.

  • Add the wet mixture to the dry bowl and stir until just combined. DO NOT OVERMIX! The batter should be slightly lumpy. Gently fold in the chocolate chips.

  • Bake in the 400 degree oven for 10 to 11 minutes, or until a toothpick comes out clean. Cool in the pan before transferring to a wire cooling rack.

  • Store in an airtight container.
