These work well for doubling or halving, too!
Preheat the oven to 400F. Line 24 mini muffin tins with paper liners OR grease 24 mini muffin tin cups.
Mix the dry ingredients in a large bowl.
Mix the wet ingredients in a different, medium-sized bowl.
Add the wet mixture to the dry bowl and stir until just combined. DO NOT OVERMIX! The batter should be slightly lumpy. Gently fold in the chocolate chips.
Bake in the 400 degree oven for 10 to 11 minutes, or until a toothpick comes out clean. Cool in the pan before transferring to a wire cooling rack.
Store in an airtight container.
