I have made it several times on the Weber and the only change I’ve made is using low sodium soy sauce as the cedar smoke gives it sort of a salty flavor on its own. Smoke alarm went off several times during cooking even with my range fan that vents to outside. ultimately it turned out a little closer to medium than medium rare but was still very tender and quite tasty. The season/rub was just OK in my opinion and might try something different for another time. Also, many standard roasters aren’t oven safe past 450 so I used a 15 inch cast-iron skillet.
